We wrote recently about being brought in to equip All'Antico Vinaio's first Maltese outpost on Republic Street, Valletta. That piece covered the scope of the work: the custom wall-hung refrigeration cabinets, the counter layout, the small equipment, and the thinking behind how a high-volume operation like this needs to be set up to perform day in, day out. Now that the doors are open and the schiacciata is flying out, we wanted to take a moment to show you how it all looks in practice, and to say something we do not always say loudly enough: we are genuinely proud of the team that made this happen.

The shop, as it stands

Walk through the door on Republic Street and the brief is immediately clear. Red metro tiles running the full length of the back wall. Black-framed display fridges mounted high, loaded with cuts of cured meat and whole legs of prosciutto. Berkel slicers positioned at the counter, ready for service. Ohaus scales alongside them. The display counter stretching the length of the shop, keeping everything cold and accessible and well presented. It is a purposeful space, built around a single idea: make excellent sandwiches, at volume, without compromise.

Every element you see behind that counter was supplied and installed by the Spiteri Catering team. The wall-hung refrigeration cabinets are bespoke, manufactured to fit the frames our team fabricated on site. They had to look right and perform right, and getting both of those things simultaneously is not always straightforward. The display counter runs the full length of the floor space, presenting product cleanly at the correct temperature. The Berkel slicers, positioned at intervals along the preparation area, are the workhorses of the whole operation: this is a shop where paper-thin prosciutto and hand-carved meats are sliced to order all day long, and the equipment has to keep up without fail.

A word about the people

Projects like this do not come together through planning alone. The finished photographs show a handsome, well-appointed shop, and they should, because the brief was a demanding one. But what they do not show is the number of people who had to work carefully and in close coordination to get everything installed correctly, on time, and to the standard that a brand like All'Antico Vinaio demands.

Our engineers and technicians put a great deal of themselves into this project. The custom fabrication work for the wall frames was precise, painstaking work. The refrigeration installation had to integrate with an interior that was being finished at the same time. Every surface, every unit, every connection had to be right before the fit-out could be signed off. The whole Spiteri Catering team rose to the brief, and we are very glad that they did.

To every engineer, technician, project coordinator, and member of the Spiteri team who worked on the All'Antico Vinaio fit-out, thank you. This one looks as good as it works, and that does not happen by accident.

The bigger picture

All'Antico Vinaio has 56 locations worldwide. Valletta is the newest.
