Why Now Is the Time to Plan Your Kitchen Upgrade

Home / News / Why Now Is the Time to Plan Your Kitchen Upgrade

TL;DR

The quieter winter months are the best time to plan a kitchen upgrade in Malta and Gozo. Order early to beat long lead times and the spring rush, use this summer's problems as your brief, and phase the work so you can keep trading.

The busy months are behind us. Across Malta and Gozo, terraces are emptying, tourist numbers are easing and many kitchens are finally catching their breath after a long, hot summer of service.

For most operators, this is the time to rest. For the smart ones, it is also the time to plan. The quieter winter months are the best window of the year to upgrade, refurbish or completely refit a commercial kitchen, and the decisions you make now will shape how smoothly you trade when the visitors return in spring.

Why Start Planning Now?

Lead times are real. Much of the best commercial catering equipment is manufactured to order by leading European brands and then shipped to the islands. Bespoke cooking suites, refrigeration and stainless steel fabrication can take several weeks from order to delivery. Plan in November and your equipment arrives in good time; plan in March and you may still be waiting when the first bookings come in.

Avoid the spring rush. Every year, a wave of restaurants, hotels and cafés decide to refurbish just before the season starts. Installers, electricians and gas engineers all get busier at the same moment. Booking your project early means you choose the dates, rather than taking whatever is left.

Learn from the summer while it is fresh. Right now you know exactly where your kitchen struggled: the fridge that could not keep up on a 35°C August night, the bottleneck at the pass, the glasswasher that never quite finished a cycle in time. Write it down now, while the memories are vivid, and you have the perfect brief for your upgrade.

Spread the investment. Planning ahead gives you time to compare options, budget properly and phase the work, rather than making rushed decisions under pressure.

The problems you noticed this summer are the best brief your next kitchen will ever have.

Where to Start

A good kitchen upgrade begins with honest questions rather than a shopping list. Before you speak to anyone about equipment, sit down with your head chef and ask:

  • Which pieces of equipment broke down, or nearly did, this summer?
  • Where did the team lose time during service?
  • Is your refrigeration sized and positioned for how you actually cook today?
  • Has your menu changed since the kitchen was last designed?
  • Are energy bills higher than they should be for the size of your operation?

The answers will tell you whether you need a single replacement, a partial refurbishment or a full redesign.

The next step is a site survey. A proper survey looks at the space, the workflow, existing gas, water, electrical and extraction connections, and any constraints of the building itself. Older properties in Malta and Gozo often bring their own challenges, from narrow access to limited ventilation routes, and it is far better to discover these in November than on installation day.

Keep Trading While You Upgrade

Not every business can close for a month, and you do not have to. With careful planning, most upgrades can be phased around your opening hours:

  1. Plan and order in November and December, so equipment is confirmed and on its way.
  2. Prepare the site during your quietest weeks, including any electrical, plumbing or extraction work.
  3. Install in stages, replacing one section of the kitchen at a time so the rest keeps working.
  4. Test, calibrate and train before the season begins, so your team is confident with new equipment long before the first busy weekend.

If you do plan a short closure over the winter, a well-organised schedule means every day of downtime is used productively.
